Cinnamon toast is one of those super easy breakfasts or snacks that’s quick to put together whenever you have a hankering for it. Butter some toasted bread, cover it liberally with a mixture of cinnamon and sugar, and broil it until the sugar is bubbly. Sweet and simple.
And while there’s nothing wrong with that, this recipe for Banana Bread Cinnamon Toast raises the bar, a lot. You can start with homemade or store-bought banana bread, preferably not freshly baked. (We want it tender, but not too tender.) Mix together butter, sugar, and cinnamon, and slather that deliciousness on the whole piece of bread—top, bottom, and sides. Bake until crisp.
The result is a treat with fantastic textural contrast. The thick slices of banana bread remain moist and soft in the middle, while the thin layer of sugar mixture on the outside adds an appealing crunch. The warm spices of the cinnamon-sugar crust enhance the flavor of the banana bread, while just a touch of salt helps balance the overall sweetness. One could argue that this cinnamon toast is a little too sophisticated to be kid stuff…so feel free to eat it all yourself.
