Food influencer Emily Mariko always loves to give her fans a look into her kitchen, and a recent video revealed how she makes one of her son Teddy’s favorite homemade snacks: Carrot banana muffins.
Mariko, 33, took to Instagram on August 24 to document how she makes the sweet treat. With Teddy by her side, Mariko began the process by cutting up bananas and mashing them in a bowl with a fork.
Once she was done mashing the bananas, Mariko started to peel large carrots and used a grater to shred them. After mashing the bananas one more time, Mariko combined the bananas and carrots into one bowl and added a serving of oil. She did not specify which oil is best to use, so viewers can likely use their preferred oil.
After she added two eggs, Mariko continued the recipe by pouring vanilla extract, an unspecified jam and milk into the bowl.
She continued to add the dry ingredients into the bowl, which included brown sugar, oats, baking powder, salt and cinnamon. Mariko then made sure to mix all of the ingredients together before she sprayed her muffin pan and distributed the batter.
After she put the batter in the oven, Mariko eventually took the muffins out and used a tooth pick to make sure that the treat had fully cooked.
Once the muffins had cooled down, Mariko tried one of the sweet treats herself and raved about how “moist” they were. Mariko was clearly a fan of the finished product, though she let Teddy have the final say as he bit into a muffin of his own.
“That’s a big bite,” she laughed as Teddy shoved the entire muffin into his mouth. Teddy enjoyed two of the muffins, though clearly wanted more as he patiently looked at his mother with pleading eyes.
Mariko concluded the video by explaining that the carrot banana muffins were a hit in her household. She even shared a glimpse at the muffin pan, which was half empty after her family picked at the treats.
Shortly after Mariko shared the video, several of her followers took to the comments section to rave about how delicious the muffins looked. “Yum! Great recipe. I have been putting more oats in my baked goods too. Cuts back on the flour, adds texture and taste,” one person commented, while another asked that she share the written recipe.
Meanwhile, others couldn’t help but gush about how adorable Teddy is. “Awww Teddy is the absolute cutest!!!!” a third person said, while an additional viewer chimed in, “Cooking with them at this age is so much fun. Love that your content includes him.”
